Optimisation of flavour ester biosynthesis in an aqueous system of coconut cream and fusel oil catalysed by lipase

► Coconut cream and fusel oil, the low-cost natural materials, were converted to valuable esters. ► The lipase Palatase ® 20000L was used as the biocatalyst. ► The biocatalysis process was carried out in an aqueous system. ► The reaction conditions were optimized using the Taguchi method to obtain high yield of esters.
