► Carrot extract enhance the bactericidal effect of lactoperoxidase system. ► β-Carotene was one of the major enhancers of LPOS antimicrobial activity. ► Oxidised β-carotene/SCN− redox cycling reaction may work on the activity. ► β-Carotene-rich food may encourage the development of an effective disinfectant.
