Lipase-catalyzed synthesis and characterization of flaxseed oil-based structured lipids

► Structured lipids were biosynthesized by interesterification of flaxseed oil and tricaprylin. ► The incorporation degree of caprylic acid into flaxseed oil was dependent on the type of lipase. ► The medium-long-medium (MLM)/medium-medium-long (MML) ratio was dependent on the type of lipase. ► The synthesized TAGs as well as the MLM- and MML-SL isomers, were structurally characterized.
