Structural characterization of pellicle polysaccharides of Acetobacter tropicalis SKU1100 wild type and mutant strains

► Thermotolerant acetic acid bacterium, A. tropicalis, produces pellicle polysaccharide to float on a liquid culture surface. ► The polysaccharide is capsular polysaccharide (CPS) consisting of glucose/rhamnose/galactose. ► The CPS is converted to extracellular polysaccharides (EPS) having different structures by mutations. ► We have presented the structures of wild-type CPS and two EPSs of the mutant strains.
