Effects of corn oil on glass transition temperatures of cassava starch

► The effect of CO on Tg values of CS with different moisture content was assessed. ► sub-Tg thermal event around 45-60 °C, was observed in low moisture content CS-CO blends. ► Appearance of thermal events seemed to be favored by the addition of CO to CS. ► Apart from water, CO also plasticized CS.
