Fabrication of starch-based nanospheres to stabilize pickering emulsion

► Starch-based nanospheres were used as solid particulate emulsifier. ► A amphiphilic group was introduced into the backbone of starch by a simple esterified reaction. ► Amphiphilic starch-based nanospheres were fabricated by a nanoprecipitation procedure. ► Nanospheres adsorbed at the interface between oil and water phase. ► The catastrophic inversion and transitional inversion could be easily achieved.
