Ozone gas affects physical and chemical properties of wheat (Triticum aestivum L.) starch

► Ozone treatment caused partial depolymerization of high molecular weight amylopectins. ► Ozone treatment resulted in higher amount of carboxylic groups in amylopectin fractions. ► Ozone treatment increased swelling of starch granules during heating in water and subsequent increase in paste breakdown. ► Starch granule crystallinity was not affected by ozone treatment.
