Les conduites d’alcoolisation concernent l’ensemble de la population, avec des spécificités liées notamment à l’âge du consommateur. Avec le temps, des modifications dans l’homéostasie de certains circuits neuronaux centraux, lentement réversibles lorsque l’intoxication cesse, expliquent l’appétence pour l’alcool par la conjonction de plusieurs phénomènes étroitement intriqués impliquant notamment le “circuit de récompense” dopaminergique mais également l’acide gamma-aminobutyrique (GABA) et les peptides opioïdergiques.
