The inflammatory component of metabolic diseases is of particular interest, with the concepts of “metabolic inflammation” corresponding to the low-grade chronic phenomenon or “postprandial inflammation” for the transient event observed following a meal. Many biomarkers are used and endotoxemia is among the factors of interest. The role of dietary lipids in inflammation is discussed. Dairy products are often criticized for their content of saturated fatty acids suspected to promote inflammation. To date, the impact of dairy products on postprandial inflammation depends primarily on the amount consumed, as well as other sources of lipids. In addition, no negative effect of dairy consumption on chronic inflammation is described to date; three studies even describe a protective effect in lean subjects to obese. In an approach of preventive nutrition, the etiology of metabolic inflammation must be placed in a context of balanced diets.
