ABSTRACTDiabetes mellitus is a chronic disease characterized by severe pathologies and complications, but the exact molecular basis of these complications has yet to be fully explained. Since the late 1980s, increasing evidence has shown that advanced glycation end-products (AGEs) play a significant role in the progression of many complications. AGEs act as pro-oxidants and pro-inflammatory agents, damaging cells, tissues and organs. Some AGEs are endogenous, but exogenous AGEs, found in many foods, also contribute to serum AGE concentrations. Reduced intake of dietary AGEs, combined with intensive glycemic control, may help to prevent the onset and progression of diabetes complications.

RÉSUMÉLe diabete sucre est une maladie chronique caracterisee par de graves troubles et complications, mais le fondement moleculaire exact de ces complications n'est pas encore entierement explique. Les donnees qui montrent que les produits de glycation avancee (AGE) jouent un role important dans la progression de nombreuses complications s'accumulent depuis la fin des annees 1980. En agissant comme des produits qui favorisent l'oxydation et l'inflammation, les AGE portent atteinte aux cellules, tissus et organes. Certains AGE sont endogenes, mais les AGE exogenes, qu'on retrouve dans de nombreux aliments, font aussi augmenter les concentrations seriques d'AGE. Une reduction de l'apport alimentaire en AGE, en association a un controle rigoureux de la glycemie, pourrait contribuer a la prevention de la survenue et de la progression des complications du diabete.
