Evaluating the impact of sprouting conditions on the glucosinolate content of Brassica oleracea sprouts

Brassica sprouts had a higher content of aliphatic glucosinolates than indole glucosinolates, being sinigrin, glucoiberin, glucoraphanin and progoitrin the major compounds in the sprouts.
