Efficacy of washing with hydrogen peroxide followed by aerosolized antimicrobials as a novel sanitizing process to inactivate Escherichia coli O157:H7 on baby spinach

► Allyl isothiocyanate (AIT) showed high antimicrobial effect against E. coli O157:H7. ► Lactic acid (LA) enhanced the antimicrobial effect of AIT against E. coli O157:H7. ► H2O2 washing followed by aerosolized AIT + LA is an effective decontamination method.
