Synthesis and purification of structured triacylglycerols from evening primrose and viper's bugloss seed oils

► Structured lipids were produced from Echium plantagineum and Oenothera biennis oils. ► Structured lipids based on C18 PUFAs were synthesized using Candida antarctica lipase. ► Two routes tested to obtain structured lipids γ-linolenic and stearidonic acids based. ► Structured lipids were synthesized, purified, and regiospecifically analyzed.
