Effect of nitrogen fertilisation rates on the content of fatty acids, sterols, tocopherols and phenolic compounds, and on the oxidative stability of walnuts

► Walnut contains high concentration of bioactive lipidic and phenolic compounds. ► Nitrogen fertilisation affects the oxidative stability and the phenolic content. ► Nitrogen fertilisation does not influence the sterols content of walnuts. ► OXITEST analysis was applied for the first time to study the oxidative stability.
