Incorporation of phytosterols in soy phospholipids nanoliposomes: Encapsulation efficiency and stability

► 200 nm soybean phospholipids liposomes containing phytosterols were obtained. ► The incorporation of sterols increases the size of the liposomes. ► Ethanol and heat are applied to obtain colloidally stable systems.
