Interlocking of β-carotene in beta-lactoglobulin aggregates produced under high pressure

► High-pressure treatment of β-lactoglobulin induces the formation of aggregates. ► The aggregate diameters are ranging from 24 to 255 nm in diameter. ► β-Lactoglobulin aggregates are efficient retinol and β-carotene carriers. ► 33% of Total β-carotene are gradually released during gastro-duodenal digestion.
