Curie-point pyrolysis-gas chromatography-mass spectroscopic analysis of theabrownins from fermented Zijuan tea

► ZTTBs contain predominantly two fractions: <3.5 kDa and >100 kDa. ► CP-Py-GC/MS had effectively identified chemical composition of ZTTBs. ► Chemical composition and characterization of ZTTBs were revealed. ► Suitable pyrolysis temperature of ZTTBs was selected. ► Py-GC/MS may provide new possibilities for studying complex plant pigments.
