Effect of γ-irradiation on pasting and emulsification properties of octenyl succinylated rice starches
چکیده انگلیسی
► OS starch showed different results by irradiation according to amylose content. ► Irradiation decreased pasting properties, especially in waxy rice starch. ► Higher dose (50 kGy at this research) degraded the starch chains as well as OS groups, resulting in crystallinity decrease. ► 10 kGy irradiation was seemed to be a good method for effective OS rice dextrin.
