► The study presents a novel technique to control the ice cream freezing process. ► The presented technique is based on the monitoring of product electrical characteristics. ► The proposed method has been compared with standard control techniques. ► The presented technique overcomes some drawbacks of the standard methods. ► Measured electrical parameters present good correlation with data from standard control techniques.
