Extraction optimization of a hydrocolloid extract from cress seed (Lepidium sativum) using response surface methodology

In this paper, it was observed that numerical optimization for Lepidium sativum hydrocolloid extraction determined the optimum extraction conditions to be temperature 35 °C, pH 10, extraction time 15 min and water: seed ratio 30:1.
