Correlation between the release of sugars and uronic acid and free oil recovery following enzymatic digestion of oil seed cell walls

► Aqueous enzymatic extraction of oilseeds. ► Uronic acid and reducing sugar concentrations were quantified in aqueous phase. ► We controlled if there was a correlation between these concentrations and oil yield. ► For oil from sunflower the correlation is good. ► For oil from rapeseed a high amount of emulsion prevent a good correlation.
