Quantitative analysis of phenolic components and glycoalkaloids from 20 potato clones and in vitro evaluation of antioxidant, cholesterol uptake, and neuroprotective activities
چکیده انگلیسی
► Twenty selected potato clones, including pigmented ones were analysed and compared. ► Pigmented potatoes contain more phenolics and these components were retained in granules. ► Pigmented potatoes have close to one half of the antioxidant activity of berries. ► Granulation process significantly reduced glycoalkaloids level. ► Extracts from selected potato granules showed potent neuroprotective activity.
