چکیده انگلیسی
► Ultra-high pressure (UHP) was applied for pectin extraction from navel orange peel for the first time. ► The optimal extract conditions of UHP extraction were investigated. ► The properties and characteristics of pectin extracted by UHP, THE and MAE were evaluated and compared. ► Compared with pectin extracted by THE, MAE and CP, UHPE pectin has the highest extraction yield, apparent viscosity, intrinsic viscosity, molecular weight and activation energy.
