Low molecular weight dextran: Immobilization of cells of Leuconostoc mesenteroides KIBGE HA1 on calcium alginate beads

► Immobilization of cells was found maximum when beads of 0.6 mm were used. ► At 10% sucrose concentration maximum dextran production was found. ► Maximum dextran production from immobilized cells was found at 30 °C and after 40 °C free cells stop producing dextran. ► Immobilized cells were capable to produce dextran even after 12 days.
