Study on the granular characteristics of starches separated from Chinese rice cultivars

► We measured granular characteristics of 10 non-waxy rice starches. ► The granular structure was related with thermogravimetric parameters. ► Increasing relative crystallinity would increase the activation energy. ► The relative crystallinity depended upon amylopectin chain length.
