Physicochemical and comparative properties of pectins extracted from Akebia trifoliata var. australis peel

► Akebia trifoliata var. australis peel was rich in pectin (13.26%) and sugars (18.21%). ► HEP and CEP were of low neutral sugar contents, high DE values and GlaA contents. ► Typical of amorphous character and similar FT-IR patterns were shown in HEP and CEP. ► HEP had a higher molecular weight, emulsion activity and gelling properties than CEP. ► A. trifoliata var. australis pectin had the potential for food industry application.
