Ascorbyl palmitate-β-cyclodextrin inclusion complex as an oxygen scavenging microparticle

► Ascorbyl palmitate-cyclodextrin inclusion complex (IC) has been developed as an oxygen scavenger. ► IC had better thermal stability than ascorbyl palmitate (AP). ► IC does not require a transition metal catalyst for oxygen scavenging reaction. ► IC had better oxygen scavenging capability than AP and iron powder at both 23 and 4 °C.
