Livestock farming practices have evolved since the end of the Second World War. Satisfying the need for food meant that the original aim was above all for productivity. Present-day objectives now take account of the nutritional quality of products, as well as the wellbeing of the animals, the environment and traceability. Today, selection and knowledge of nutritional requirements have resulted in the animals being leaner than those raised fifty years ago. They also provide fewer saturated fatty acids in human food. This article will examine the nutritional composition of animals reared in days gone by and what is consumed today. The prospects for these animal products will be presented.
