Enzymology of gallotannin and ellagitannin biosynthesis

Enzyme studies on the pathways from gallic acid via 1,2,3,4,6-pentagalloyl-β-d-glucose to complex gallotannins and monomeric and dimeric ellagitannins are reviewed.
