Conformational changes in the unfolding process of lysozyme in water and ethanol/water solutions

▶ We followed the thermal unfolding of lysozyme in two different environments. ▶ In both systems, the enzyme undergoes a cooperative two-state unfolding. ▶ A reduced stability of the folded state was revealed on ethanol addition. ▶ The same unfolding mechanism was observed in the two solvents. ▶ Experimental findings did not indicate the occurrence of intermediate formation.
