Preparation of Mannitol@Silica core-shell capsules via an interfacial polymerization process from water-in-oil emulsion

- Mannitol@Silica capsules with thick shell were prepared from the W/O emulsion.
- Diffusion of APTS and TEOS across the interface controlled the growth of the shell.
- Irreversible phase change over 100 °C shows latent heat of 147.4 J/g.
