Effect of pH and storage conditions on Listeria monocytogenes growth inoculated into sapote mamey (Pouteria sapota (Jacq) H.E. Moore & Stearn) pulp

► Low-acid mamey pulps can support the growth of Listeria monocytogenes. ► Mamey pulps at pH 4.5 hindered but did not inhibit the bacterial growth. ► Mamey pulps at pH 4.0 inhibited the bacterial growth for 15 days at 4 °C. ► Gompertz model had an adequate goodness of fit and accuracy in the modeling.
