Evaluation of a post-lethality treatment against Listeria monocytogenes on Ricotta salata cheese

► We assessed the effectiveness of heat treatment on L. monocytogenes survival. ► Ricotta salata were contaminated with a mixture of 3 L. monocytogenes strains. ► A reduction of 6 log10 cfu g−1 in L. monocytogenes count was obtained.
