► Food safety system applications of Turkish dairy businesses has been assessed. ► Findings were obtained with respect to milk collection capacity. ► Managers in all capacities of plants have inadequate food safety knowledge. ► Larger dairy plants had better compliance with current Turkish food safety codes. ► Governmental programming that trains management in food safety is needed.
