چکیده انگلیسی
► The processing conditions and quality of Alheira de Vinhais were studied. ► The structural conditions of regional kitchens were satisfactory. ► The European and Portuguese normative were complied. ► Reduced food processing hygienic conditions were sometimes observed. ► Microorganisms associated with foodborne illnesses were not detected.
