Identification of 2,3-dihydro-3,5-dihydroxy-6-methyl-4H-pyran-4-one as a strong antioxidant in glucose-histidine Maillard reaction products

► Compound contributing to the antioxidant activity of MRPs was investigated. ► Chromatogram of Glc-His MRPs on Bio-gel P-2 column was illustrated. ► GC-MS analysis and HPLC analysis was were employed to identify antioxidants in MRPs. ► DDMP was identified as a strong antioxidant in Glc-His MRPs.
