Influence of the parameters of the Rancimat test on the determination of the oxidative stability index of cod liver oil

► Cod liver oil was submitted to Rancimat testing. ► The effect of temperature, airflow and weight on the oxidative stability was studied. ► ANOVA and RSM were performed. ► Temperature effect was found to be the most significant.
