Characterization of a d-psicose 3-epimerase from Dorea sp. CAG317 with an acidic pH optimum and a high specific activity

- A psicose-producing DPEase is characterized from Dorea sp. CAG317.
- It is the first reported DPEase showing acidic pH optimum (pH 6.0).
- It shows significantly high specific activity (803 U/mg).
- It exhibits higher productivity of psicose at pH 6.0 than other tested DPEases.
