Efficacy of neutral electrolyzed water for sanitization of cutting boards used in the preparation of foods
چکیده انگلیسی
► An effective alternative to sodium hypochlorite as a sanitizer was investigated. ► Neutral electrolyzed water (NEW) was comparable to NaClO in reducing bacteria. ► Bamboo and hardwood cutting boards responded similarly to the sanitization. ► NEW had similar effect on reducing gram negative and gram positive bacteria.
