Adsorption and shear rheology of β-lactoglobulin/SDS mixtures at water/hexane and water/MCT interfaces

► β-lactoglobulin alone and mixed with varying SDS concentrations are studied. ► Adsorption and shear rheology of layers at water/oil interface are determined. ► With increasing concentration in mixtures SDS dominates at the interface. ► Elasticity of adsorbed layers increases at low SDS concentrations. ► Structures formed at water/hexane and water/MCT interface are different.
