High-throughput Screening of Potential Allergens from Complex Proteins of Large Yellow Croaker (Larimichthys crocea) by Mass Spectrometry

In this study, by combining simulated gastric fluid digestion, mass spectrometry-based proteomic technology and sequence homology analysis were shown to be a good method to systematically investigate the potential allergens from large yellow croaker proteins.
