- Aroma profiles of ginseng at different ages were studied by using E-nose and GC-MS.
- The correlation between sensor response and identified compounds was investigated.
- Closely related terpenes were selected using PLS loading and score analysis.
- Content of most aroma contributed by terpenes can be predicted by gas sensors.
- E-nose was performed better than GC-MS in predicting ginseng ages.
