Development of a fast and selective separation method to determine histamine in tuna fish samples using capillary zone electrophoresis

► A fast and selective CZE method was developed for histamine determination in the fish samples. ► Peakmaster® software proved to be an important tool in the selection of BGE components. ► Histamine concentrations in the samples determined by the CZE were compared with LC-MS/MS.
