Studies on the formation of methylglyoxal from dihydroxyacetone in Manuka (Leptospermum scoparium) honey

► Dihydroxyacetone (DHA) and methylglyoxal (MGO) are unique carbohydrate metabolites of manuka honey. ► DHA and MGO were quantified in a number of manuka honeys. ► DHA reacts with OPD to 2-hydroxymethylquinoxaline. ► Correlation between DHA and MGO in commercial manuka samples is a quality marker. ► No MGO formation occurs during thermal treatment of honey.
