Hydrophilic carotenoids: surface properties and aggregation behavior of a highly unsaturated carotenoid lysophospholipid

Carotenoids are typically rather insoluble compounds. However, when a carotenoid acid was used as an acyl part in a phospholipid the phosphocholine group acted as an efficient hydrophilisizer for the carotenoid, generating highly unsaturated surfactants.
