Esterification of guar gum hydrolysate and gum Arabic with n-octenyl succinic anhydride and oleic acid and its evaluation as wall material in microencapsulation

► Guar gum hydrolyzate was successfully esterified with oleic acid and n-octenyl succinic acid. ► Esterified guar gum hydrolyzate showed emulsification properties that were comparable to those of gum Arabic. ► Esterified gum Arabic itself showed superior emulsification property than that of its native form.
