Les effets des nutriments dépendent-ils des aliments qui les portent ? L'effet matrice

Food matrix effect is the difference between the effects of a sum of nutrients and those of a food. It reflects the fact that beyond nutrients there is non nutritive components, physico-chemical structures, interactions between nutrients, different bioavailability, which may explain some specific effects of foods, particularly when they are whole or not refined foods. A lot of examples are given particularly about whole grains and dairy products: they allow to illustrate this concept which reflect complexity in nutrition. It is why recommended dietary allowances cannot resume food advices. It is also a new research way in nutrition: it urges on more caution for scientists; it warrants the importance of dietary diversity for consumers and the need to take into consideration the food processes for food industry.
