⺠Potent cryoprotective and cold-adapted glycosylated 1,3-β-endoglucanase. ⺠Low temperature and CO2-regulated cryoactive mesocarp cherimoya 1,3-β-glucanase. ⺠Cherimoya 1,3-β-endoglucanase is active and stable in a broad acidic pH range. ⺠Fruit 1,3-β-glucanase exhibits a low degree of thermostability and thermodependence. ⺠Cherimoya 1,3-β-glucanase has one of the smallest molecular mass reported.
