آشنایی با موضوع

اینولین یک ترکیب شیمیایی با فرمول شیمیایی C6nH10n+2O5n+1 است. اینولین ها گروهی از پلی اینولین ترکیبی قندی و پلیمری از فروکتوز می باشد که با پیوندهای بتا 1 به 2 به هم متصل شده اند. در طبیعت به صورت کربوهیدرات های ذخیره ای در گیاهان و پلی ساکاریدهای خارج سلولی در برخی از میکروارگانیسمها یافت می شوند. امروزه تولید صنعتی اینولین از طریق استخراج از گیاهان تیره کاسنی و یا از شربت سااکروز با بکارگیری میکروارگانیسمهای تولید کننده ی آنزیم فروکتوزیل ترانسفرازها صورت می گیرد. این دسته از فروکتانها در روده بعلت دارا بودن خاصیت پریبیوتیکی منجر به تحریک رشد بیفیدوباکترها، تولید اسیدهای چرب کوتاه زنجیر و کاهش pH می شوند، در نتیجه از فعالیت باکتریهای پاتوژن، جذب کلسترول و ریسک سرطان کولون کاسته و از سوی دیگر جذب املاح کلسیم و منیزیوم بطور قابل توجهی افزایش می یابد. اساس استفاده از این ترکیب در صنعت لبنیات داشتن ویژگیهای جایگزینی شکر و چربی و قابلیت تغییر بافت می باشد. تحقیقات انجام شده نشان می دهد اینولین با درجه پلیمریزاسیون بالای 10 می تواند در تولید فراورده های گوشتی و لبنی بعنوان جایگزین بخشی از چربی بکارگرفته شود. ارزشهایی حسی نشان می دهد که استفاده از این پلیمرها در تولید آبمیوه، پنیرهای کم چرب، ماست، سبب بهبود خواص ارگانولپتیکی و افزایش پذیرش توسط مصرف کننده می شود. کاربرد این ترکیب در تهیه محصولات لبنی باعث بهبود خواص رئولوژیکی و ویژگیهای بافتی آنها می شود. هدف از این مطالعه بررسی کاربردهای اینولین به عنوان بهبود دهنده بافت در صنعت لبنیات به عنوان یکی از پرکاربردترین زمینه های آن می باشد. اثرات اینولین در این سیستمها به عنوان جایگزین چربی، مثلاً اینکه چگونه می تواند سبب ایجاد احساس دهانی و حالت خامهای شود، و نحوه ی ارتباط این اثرات با تغییرات رئولوژیکی در سیستمهای غذایی شامل محصولات مایع، نیمه جامد و جامد لبنی بحث خواهد شد. ساکاریدهای طبیعی هستند که توسط انواع زیادی از گیاهان تولید می شوند.
