⺠Wheat gluten proteins with similar, repetitive sequences were distinguished by MS/MS. ⺠Multiple enzymes increased coverage of proteins with few tryptic cleavage sites. ⺠Use of two search engines and specialized databases optimized MS/MS data analysis.
